For an Authentic stir-fry Robert advises -

  • Make sure your wok is clean and hot before cooking
  • Prepare ahead, e.g. peel, cut, etc
  • Use fresh vegetables and meat, and slice small
  • Hot wok, hot oil, and start cooking! The quicker the cooking the better
  • Use fresh garlic and ginger, light and dark soy sauce & 5-spice.
  • Always use rice wine and sesame oil
  • Tip for fried rice - use cold cooked rice
